Showing flavours of gooseberry and guava with herbaceous notes, about 25% of the juice was barrel-fermented in new French oak puncheons and lees stirred for six weeks (then transferred to seasoned French barriques for a month) before blending back, which has contributed great complexity and texture to the wine.
