Mabel is distilled in Richmond in concert with the talented Brogan Carr, whom Cam Marshall describes as a “genius” regarding the way she has helped the lads bring their ideas to fruition. A soft base of juniper provides the canvas, green cardamom brings fragrance and samphire salty umami, while pepperberry adds a citrus tang and a lick of spice on the subtle finish. But the Balcombe team will stress that Mabel is not all about the botanicals. Silky smooth with depth and body, Mabel is designed to have the texture and intricacy you would expect in a Balcombe Gin, yet be more versatile to work with. Just like Dame Mabel Brookes, this succeeds in any scenario: in a G & T, a Vesper or a Negroni; garnished with citrus, herbs or flowers; topped with tonic, juice or something sparkling. In other words, it’s a must for every drinks cabinet.

Mornington Peninsula Wines
South of Melbourne, the Mornington Peninsula grape growing region has a cool, maritime climate that is most known for their Pinot Noir and Chardonnay production. Other varieties that have seen some success here include Pinot Gris and Tempranillo.
However, it does seem that Pinot Noir is their focus judging from the fact that The Mornington Peninsula International Pinot Noir Celebration is held once every two years. The event displays the region’s capabilities in making some of Australia’s finest Pinot Noir in front of local and international audiences.
