All fruit was hand-picked and chilled over night. Whole bunch pressed and settled in tank for 24 hrs at ambient temp, then run off to 300L and 500L French oak (25% new) with no additions. Ferments are allowed to peak at 28 degrees. Post ferment, the majority of the vessels were stirred for a few weeks, the sulphured and moved to cool storage for maturation. A very small percentage of the wine was left ambient to undergo natural MLF. This was purely to ensure we had a lower acid component for the final blend. Whilst 2021 was warm enough, our aim is to pick Chardonnay on the underside of 13 beaume and retain as much natural acidity as possible.
The resulting wine was blended after 9 months in oak, matured on gross lees in tank for a further 3 months to further build the wines texture. Showing the best of each vineyard, this wine has lifted citrus, lemon balm, nougat and oyster shell aromatics. Briney acidity threads together an array of white stone fruit, brioche and lime zest. – Liam McElhinney

Tasmanian Wine
The Tasmanian wine region is a cool climate region, the most southerly of all wine regions in Australia. Due to the lower temperatures, the area grows primarily Chardonnay, Pinot Noir and Sauvignon Blanc, with smaller plantings of Riesling, Pinot Gris and Cabernet Sauvignon.

While Tasmania makes great still wines, the exceptional Chardonnay and Pinot Noir also make for excellent sparkling wines.
More recent vintages since 2005 have been positively impacted by the effects of global warming. With slightly higher temperatures the grapes are ensured to ripen fully and produce more vibrant wine.
