About this Wine

Biodynamic. Employing elements of ripasso and appassimento—inspired by the wines of Valpolicella—this is a fascinating Cabernet, totally different to anything we know of on the market. It comes from a blend of 20-plus-year-old Cabernet Sauvignon vines in both the Quindalup and Wilyabrup sub regions of the Margaret River.

The fruit was foot-crushed and fermented wild before maturation in used oak. In ripasso style, these ferments included some of the Cabernet skins from Blind Corner’s Amarone-styled Bernard cuvée (Wilyabrup) from the same year. These latter grapes (10% of the blend) were first air-dried before fermentation (appassimento)—a process intended to simultaneously soften and lengthen the wine’s tannic frame while adding layers of flavour complexity. Then, there’s a glug of Merlot judiciously blended in. Finally, the wine was raised in old wood and bottled without filtration.

Margaret River Wine

In the southwest of Western Australia, the Margaret River wine region is unique in that it is the most maritime-influenced region in all of Australia. The cool Indian ocean breezes come in through the summer to keep the temperatures around the vines steady resulting in an unusually even accumulation of warmth in the growing season. It is also quite dry as interestingly less than 20% of the annual rainfall occurs as the grapes are growing. The region’s climatic factors have been compared to what Bordeaux would be like in a dry season. While the region’s total production is relatively small (3% of Australia’s total wine production), it is responsible for 20% of our premium wine market.

Cabernet Sauvignon, Shiraz as well as Bordeaux blends are all very popular red wine options in the region.

For whites, refreshing blends of Sauvignon Blanc and Semillon as well as complex, age worthy Chardonnays are the specialties.
